Sorry I have been MIA since Thursday!

The Med Student and I headed to San Francisco this weekend for a wedding for one of his college roommates.  It was truly a weekend to remember.  The wedding was at Leonard Lake in Mendocino County California.  It was absolutely gorgeous.  We had a great time seeing old friends and celebrating the marriage.  The bride and groom could not have been more happy and in love.  Such a special weekend!!

I want to give you a full recap of the weekend, but I’m exhausted.  So instead, I will leave you with a teaser and a recipe.

Which of the following statements did not occur this weekend?

1.   The Med Student and I got one hour of sleep Friday night… in a Denny’s parking lot.

2.  The Med Student shaved his beard.

3.  We had to ford a river to get to the (very beautiful) wedding site.

4.  The Med Student tore up the dance floor at the reception.

5.  I got a hug from my sweet mom and two hours of sleep on Sunday in my childhood bedroom in Dallas.

Recipe Time…

I made banana bread to take on my trip to San Fran.  The Med Student and I were meeting at the San Francisco airport and then had a 3 hour drive from there to get to the location of the wedding.  I know my guy and knew he would be hungry for something sweet after his cross-country flight so I wanted to be prepared with something for the drive.

One summer in college, The Med Student was working in Wyoming with his roommate that just got hitched this past weekend.  While he was away, I decided to remind The Med Student (well, at that time he was The Undergrad Student) about his favorite gal in Texas, so I mailed him and the roommate banana bread.  Not my finest moment.  It was August.  And I was so afraid of burning the bread that I actually undercooked it.  So, I sent The Med Student and his pal undercooked, rotten bread.  Fail.  This story crossed my mind when I was deciding what to bake and made me chuckle.  So, in honor of this silly story and the groom – I went with banana bread.

My favorite banana bread recipe is the one in the Better Homes and Gardens cookbook – you know, the one that is red and white check?  We all have a copy.  But, I decided to try out a new recipe.  I didn’t mess with the recipe, so I just provided the link directly to the original posting on For the Love of Cooking.   I kept it full fat and full of love.  I take that back, I did just put together a little crumb topping to sprinkle on top before baking with brown sugar, butter, and oats.  But, other than that - I followed the recipe word for word.  It was so very yummy.  Perfect banana flavor and moist.  It turned into breakfast for everyone in our cabin Saturday morning.  Nothing better than making a baked good and sharing it with good friends over coffee that you haven’t seen in a very long time.  This recipe might actually replace my BHG one.  Do you have a go-to banana bread recipe?  There are so many versions out there – this one is for sure a keeper!
